Ingredients
- 1 cup pumpkin purée (plain)
- 1 cup natural peanut butter
- 2 cups oat flour
- 1 tsp cinnamon
Method
- Heat the oven to 350°F and line a baking sheet with parchment.
- Stir the pumpkin, peanut butter, and cinnamon together in a big bowl until smooth.
- Fold in the oat flour a cup at a time until a firm dough forms. Add a spoon of water if it feels dry and crumbly.
- Roll the dough to about a quarter inch thick on a floured board and cut out your shapes.
- Bake for 20 to 25 minutes until firm and dry to the touch. Cool fully on the tray before serving.
This is the Sunday batch at our house. It takes one bowl, four ingredients you can say out loud, and about fifteen minutes of actual work. The dough rolls out like a sugar cookie dough, cuts clean, and bakes up firm enough to snap.
What comes out of the oven is a plain, honest biscuit. No frosting, no sprinkles, nothing your dog does not need. Just pumpkin, peanut butter, oats, and a whisper of cinnamon, doing exactly what a treat should do.
Storage
These biscuits have no preservatives, so treat them like the fresh food they are.
- On the counter in an airtight tin: 3 days
- In the fridge: up to a week
- In the freezer: up to 3 months, thawed on the counter before serving
If a biscuit ever smells off or shows mould, the whole batch goes in the bin. When in doubt, throw it out.
